Broccoli Cheese Soup
Ingredients
4 T butter
3 cloves garlic
1 medium yellow onion, diced
1 medium carrot, diced
Salt and pepper, to taste
¼ c flour
½ t cayenne pepper
4 cups vegetable or chicken broth
2 cups whole milk
4 cups broccoli florets
3 cups cheddar cheese, plus more for topping
Directions
Melt the butter in a large pot over low heat. Add the garlic and cook, stirring until soft, about 5 minutes. Add the onion and carrot, season with salt and pepper. Increase the heat to medium and cook, stirring occasionally, until the vegetables begin to soften, about 10 minutes.
Add the flour and cayenne, whisking as you do and cook until the mixture thickens, about 2 minutes. Gradually whisk in the broth, then the milk. Add the broccoli, bring to a simmer and cook until the broccoli is tender, about 10 minutes.
Reduce heat to low. Transfer half of the soup to a blender, puree, then return it to the pot. Stir in the cheddar, cooking until it's melted and creamy, 3-4 minutes.
