Chicken Tacos
Ingredients:
For the marinade:
2 cloves garlic
1 Tbsp olive oil
1 Tbsp lime juice
1 Tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
½ tsp oregano
1 tsp salt
¼ tsp black pepper
2 lbs chicken thighs (or breasts)
For tacos:
12 corn tortillas
Toppings: Shredded Cheese, Chopped Red Onions, Tomatoes, Salsa, Limes
Instructions:
Mix marinade ingredients together and pour over chicken. Marinate for at least 30 mins and up to 24 hours.
Preheat the oven to 425 degrees.
Heat a large cast iron skillet over medium-high heat. Add in just enough oil to coat the bottom of the pan (about 1 Tbsp).
Sear the chicken breasts on one side for 5 minutes. Then flip and immediately transfer the cast iron pan to the preheated oven.
Bake at 425 degrees for 10-15 minutes or until chicken is cooked through to 165 degrees.
Remove the chicken from the oven and let it rest for 5-10 minutes before chopping.
Tenderfoot Tip:
Pan fry the tortillas by preheating a skillet with a small amount of oil and cooking the tortillas until blistering but still soft.
