Chicken Tacos

Ingredients:
For the marinade:

  • 2 cloves garlic

  • 1 Tbsp olive oil

  • 1 Tbsp lime juice

  • 1 Tbsp chili powder

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • ½ tsp oregano

  • 1 tsp salt

  • ¼ tsp black pepper

  • 2 lbs chicken thighs (or breasts)

For tacos:

  • 12 corn tortillas

  • Toppings: Shredded Cheese, Chopped Red Onions, Tomatoes, Salsa, Limes 


Instructions:

  1. Mix marinade ingredients together and pour over chicken. Marinate for at least 30 mins and up to 24 hours. 

  2. Preheat the oven to 425 degrees. 

  3. Heat a large cast iron skillet over medium-high heat. Add in just enough oil to coat the bottom of the pan (about 1 Tbsp).

  4. Sear the chicken breasts on one side for 5 minutes. Then flip and immediately transfer the cast iron pan to the preheated oven.

  5. Bake at 425 degrees for 10-15 minutes or until chicken is cooked through to 165 degrees. 

  6. Remove the chicken from the oven and let it rest for 5-10 minutes before chopping. 

Tenderfoot Tip:

  • Pan fry the tortillas by preheating a skillet with a small amount of oil and cooking the tortillas until blistering but still soft.
